Refried Beans

The best refried beans! We ate these on our Tostadas de Tinga de Pollo.
  • ⅓ cup butter
  • 3 cans whole pinto beans (approximately 20 oz cans)
  • ½ large onion, minced
  • ½ green bell pepper, minced
  • 5 cloves garlic
  • salt to taste
  1. Saute onion and bell pepper in butter on medium heat until onions are translucent.
  2. Add beans, 2 cans with juices and 1 can drained, and cook for 10 minutes.
  3. Crush garlic cloves into beans.
  4. Use immersion blender to blend beans until smooth.
  5. Cook on low heat, stirring regularly, for 5-10 minutes to allow flavours to set.
  6. Add salt to taste.
