
Max helped me combine the cold butter into the spelt flour mixture.
Max and I just go back from a full day in the sun with friends. We started this morning off with preparations for a picnic. I packed crackers, cheese, apples, salad in a jar and a just baked shortcake, freshly sugared strawberries and a delicious lemony cream sauce. We met our friends at the Calgary Zoo and found a picnic table in the shade right beside the flamingos.
After lunch, we managed to see some animals but mostly we chased two 3 year old boys from end to end of the zoo. We stopped by Cafe Gravity on the way home for a quick dinner on the patio. It was the first time I had eaten there and I definitely recommend that you try it. I had a Panini with back bacon, crisp apples and aged cheddar and an Orzo salad. Now we are home and exhausted but full to the brim of sunshine, fun, friends and good food. We should all be so lucky everyday!
I will share the recipe for this Strawberry Spelt Shortcake later this week, for now I’ll share some pics of the cake and the day.

Strawberries and Cream for the Shortcake.

Strawberry Shortcake is a solid way to end a picnic on a sunny day.

They are seriously studying Sheldon the tortoise who was out for a stroll.

When I think about dessert at Grandma’s house in the summer it was always strawberry shortcake. So delish.
