Yesterday morning we woke up to more snow here in Calgary. Max walked to the window and said, “Why is it snowing again?” I called my brother in L.A. and said, “I’m booking a flight. We’ll be there tomorrow!” So, in between packing, booking travel and arranging visits with family in 3 different cities in California, I remembered at midnight that it was time for cake. My lazy, tired brain immediately started thinking of ways to postpone the baking and I thought,
Cake for breakfast! That’ll kill two birds with one stone!
I googled breakfast cake and found a semi-healthy looking cake from theKitchn. Apple Cinnamon Yogurt Cake with a Cinnamon-Sugar Streak—how delicious and breakfasty does that sound? It was my first thought this morning when Max stumbled in to snuggle me. He drifted back to sleep and I stealthily got up and crept out of the room into the kitchen. About an hour later, the smell of butter, apples and cinnamon started wafting through the house and made me so happy!
The only change I made to this recipe was to add more cinnamon. It is perfect and fluffy and moist and everything you could want in a breakfast cake. I am providing the link to the recipe here, please visit the page and bake this cake. You won’t regret it!
