Mean Green Cake In A Mug

Last week’s Delightful Lime Cake, colored with spinach, was such a success I decided to try a different version this week.  I am in the middle of packing and organizing for a pre-move visit to New York so I wanted something quick.  Cake in a Mug, I thought!  What a brilliant idea.  All I need is two portions, one for me and one for Max, and then I wouldn’t have to throw away a big cake when we leave on Tuesday!  I found a recipe for white cake in a mug and modified it to add some spinach juice in place of part of the water and here, as Paul Harvey used to say, is the rest of the story…

Oh well, we can’t win them all!  I think the microwave and the spinach didn’t interact well because I definitely tasted a lot of spinach.  From now on I will stick to using spinach colouring in baked cakes. 

Speaking of colouring, when I move to NY should I start using the US spelling of color or stick with colour?  #Bi-CountryBloggerProblems
