MARKET – A Summer Menu You Need To Try

MARKET easily impressed me when they opened to fanfare in the cold month of February earlier this year.  They seemed to have everything going for them.  I loved their food and their philosophy about food.  I loved their decor.  I loved their mixologist, Rebecca Mind.  To top it all off, I thought it was very interesting that their Executive Chef was competing in Top Chef Canada.  So, I was very curious when I noticed a quiet shift in the culinary team.  One week their status updates referenced one Executive Chef and the next week it referenced a different Executive Chef.

Don’t you love a good mystery?  I do!  I’ve watched (some would call it lurked, or creeped) the twitter feeds of Calgary chefs and restaurants for a couple of years now and I focused my attention on those associated with MARKET to see how they would fare with a change at the helm of their ship so soon on their voyage.  Rumour had it that Chef Dave Bohati was definitely the man for the job and I jumped at the chance to attend a tasting of the new Summer Menu–let me tell you, rumour had it right!

MARKET is still, and maybe even more so now, at the top of the list of restaurants that I would recommend in Calgary.  You can scroll through Chef Bohati’s Instagram pics, listen to him introduce a dish or just experience the food yourself to understand his passion for quality ingredients, beautiful presentation and incredibly delicious flavour and texture combinations.

The dishes on the Summer Menu at MARKET are approachable, you don’t have to be a hard core foodie to love them.  From the starters to the desserts, you will encounter things you may not have heard of before but you will fall in love with once you taste them.  Have I convinced you?  Check out my photos and descriptions and let’s chat again later.

I could have made a serious meal out of the Bits and Bites and went home quite satisfied.

HANGER BEEF – Poplar Bluff Aligot Potato, Herb Emulsion, Hotchkiss Rainbow Chard, Wild Onion.  This is such a satisfying entree, full of flavour and comfort!

MARKET FISH - Sunchoke Agnolotti, Sweet Pea Puree, King Oyster Mushroom, Crisp Potato.

MARKET FISH – Sunchoke Agnolotti, Sweet Pea Puree, King Oyster Mushroom, Crisp Potato.  I’m still dreaming about the little bundles of love that are sunchoke agnolotti’s a week later but I am wondering why the pasta was black.  I think I need a bowl of them for lunch!

MARKET FRIED CHICKEN - Carved by Gabriel Hall, Chef Dave Bohati and Ryan AKA Mr. Fabulous. Served with the my favorite coleslaw ever, Jalapeno Cornbread, Chicken Jus,  a garlicky ranch dressing and BBQ sauce.
